Ok, so I'm down to the culture development phase of my setting "The Fifth Hour." What are the key areas that should be detailed for each culture?

So far I have:

Ecology
Language
Legends
Culture

Food
Architechture

And that's it. Am I missing anything?

Clothing
Gender roles
Religion
Economy

Although they could conceivable already be under one of your existing categories

Coming of Age
Traditions/Rituals

I'm branching out, as these could concievably come under the categories already listed.
