Does anyone have or know of good software for creating networks with user defined node?. I want to do something along the lines of mindmaps or relationship diagrams. Windows based a must open source preferably.

It might not be ideal for this, but Gliffy (http://www.gliffy.com/) is a web application for diagram creation (needs the Flash plugin).
