To be 100% certain: Should minions possess stunts or is this a BIG no-no? What about Companions?

Minions don't, as written in the rules. There's some stuff on the Evil Hat wiki that let you build "super-minions".
As far as Companions go, I'd recommend you pick up Spirit of the Season. In there, there are some "Companions Reloaded" rules that will let a companion pick up a single stunt, etc.
