So Vaxalon found this collection of lectures for Cornell's Game Design Initiative progam. It's focused on computer games, but the course description does read

"Students with no game design experience who are interested in learning the basics are encouraged to take Part 1 of our game design courses. The course is not intended solely for programmers; artists, musicians, writers, and programmers will be working together to create complete games."

More to come on this thread once those get read, but an initial skim = some interesting stuff.
