Perhaps the hunter can learn only the basics of a skill with the aid of other human tutors, but if they wish to ascend to higher levels, they need to earn the favour of a specific spirit (and probably acquire some kind of taboo as a result of this learning).  This would also work to prevent characters from trying to master all trades as they would effectively have so many taboos that the character would become unplayable.

Such characters may be able to call on their totem spirits to temporarily improve their skills in a given field, in exchange for some kind of sacrifice. If they do this enough times, their skill may permanently increase. This could be integrated into the experience system as well.

Thanks, Vulpinoid.  I think we've got something like that in the relationship system.  Every character has some number of relationships, each with a number of points in it.  A hunter's ability to hunt a deer will depend on his relationship with Deer, and if you have a spirit guardian or totem or some other kind of relationship that can help, you might be able to burn off relationship points as part of your bid.  Which will mean you'll need to do some work later on to build those relationships back up.
