I feel like demons should be smarter than to get into fights with three of God's watchdogs united in their purpose...and if they aren't smarter than that, I'm not sure I see a problem with them getting a massive thrashing.

Well, the demons may be smart, but me as the GM isn't always so bright. In the moment of play I'll often be less smart than a demon.

But they whole "demon dice for each Dog" is a bit more interesting, to me, if it could be varied. Perhaps it's gameable, though; and it might also present a handling problem if there's a "common" pool of GM dice and then a per-Dog pool, for the demon dice rolled against each.
Heck, try it out, as long as you're testing out multiples of demon dice--maybe you'll like the player authority aspect?
