Microsoft OneNote is pretty badass.

I'm not much of an office-suite fan, i use google docs more often than not for that kind of stuff, but one note is amazing.

If you're on a Mac you should give serious thought to Tinderbox. It's made for exactly this sort of collecting-stuff mode and is unique and interesting.
