I assume it is the GM who assigns grit? How much should he be giving out? Or is it a matter of taste? Will it depend a lot on how CharGen turns out?

Grit will come from CharGen and in-play actions. There will be ranges for that, which is next up on my to-write list.

Vices prevent the use of Grit, not the standard die everyone gets.

Note also that the point isn't to get a "fair chance," but rather to unleash hell accross the game table.

Man, you statisticians amaze me...

Anyway, a buddy of mine and I have been playing with Thwarting mechanics, and it's a lot of fun (which is the point). It's also--predictably--chaotic, which is good. I'll have more mechanics in specific contests worked out. The cool thing about thwarting is that it works for anything that you want to screw up. Kinda cool.
