I am setting up our first series and only have two players with myself as producer. does anyone have helpfull advice about how things will be different?

Are there three of you altogether? There's two impacts: one is that there's fewer players to say, "hey, you get fan mail," and the other is that there's only three people available to come up with all the coolness, so you have to be "on" more often.
Take breaks, don't kill yourselves trying to make it awesome.

is there a good way to mitigate the fan mail thing? I don't want it to turn into Chip and Dale patting each other on the back.

I wouldn't mitigate anything. If each player gets fan mail every scene, why not? Just get them to say what it's for. If there's something they liked -- and I mean there ought to be something in that entire scene -- then they should award fan mail for it.
