'lo again,

I have not found rules for disarming a foe.. both with a weapon and with bare hands. Are there some rules or have you guys created somehouse rules for this maneuver?

I believe disarming rules are covered in the Counter manuever and the Defensive Grappling rules (Grapple to Trap, if I'm not mistaken).

IIRC, they are. Plus you can always cut, bash, mangle, stab the arms. Works wonders. *g*

I have, on occasion, called for opposed ST checks after a Beat, to see if the weapon is hit so hard the wielder drops it.

You may want to limit those cases to limp-wristed (ie. mook) combatants. I'm far from being an expert, but when I sparred a bit with Jake, he used the beat on me many times, and not once did I risk dropping my sword. I did however spend a lot of time full-evading once he'd knocked my sword aside.

Disarms can be done.
But they are usually not done by hitting the opponents weapon or something similar.
The way I handle the is the following:
First you have to grapple to trap.
Then you continue with disarming.
If there is no success you continue to struggle.
If one success the opponents weapon fall to the ground.
If 2 then you have the weapon but in a way that you can't use it next exchange (you hold it by the blade for example).
With 3 or more successess you have the weapon and can use it.

That is of course assuming, that you are unarmed. If you are armed you can basically only dro the weapon of the foe or perhaps disarm it so that you have it in your armpit.

It is still a risky maneuver especially when you remember the lenght penalties when you try to trap. But it is not impossible at all.

It seems rare to me, especially for characters with expertise. That is, dropping your weapon when it's hit is a sure sign of a person holding it incorrectly. What I'd do, if a player called for it, is to roll the defender's whole combat pool with a TN equal to opponents ST vs the successes from the Beat with the defenders ST as TN. Or something like that.

Just not likely unless the defender is very unskilled. What this allows for is that classic scene where the character with no skill gets the sword smacked out of their hand by the trained swordsman. (Of course it's de rigeur for the inexperienced character to win the conflcit anyhow, after the villain allows him to pick up his sword - the untrained guy's massive die pool being based, of course, on loads of SAs, which pile up fast against the soulless villain).
